HOW TO MAKE OKRA SOUP (ILA ALASEPO)

Here is a step by step guide on how to make okra soup

Ingredients

Pieces of Fresh Okra

Palm Oil

Assorted Meats (Shaki, Ponmo, Cowfoot, Beef, Goat meat and offals )

2-3 Pieces Stock Fish

2 Medium Smoked Fish

Fresh prawns (optional)

Smoked Prawns

Crayfish

Chopped Scotch Bonnet (Atarodo)

Bell Pepper Chopped (Tatashe)

Cloves Garlic, Minced

Locust Beans (Iru)

Cayenne Pepper (Ata gungun)

1 Medium Onion

Knorr Chicken Cubes

Salt to taste

Preparation:

1. First, slice some of the Okra and chop the remaining one third of okra into small bits. If you don't want any chunkiness, you can blend all of it if you don't mind it being rigid and hefty. My preference is for both. To thoroughly clean the smoked fish and get rid of any dirt, immerse it in hot water, shred it, and set it aside.

 

2. On medium to high heat, boil the meats with the chopped onion, garlic, Knorr Cubes, and salt to taste. Start with rougher meats first, such as Shaki, Cow heel, and Ponmo (cow skin), and gradually add softer meats. 

 

NOTE: As the foundation of your okra soup, your meats must be really well-seasoned. Your soup may taste dull if your stock isn't flavorful enough. Make sure your finished stock is flavorful and rich. Make sure you add enough water because you'll need at least 5 cups of stock in the pot after the meats are boiled.

 

3. When the meats are soft, transfer the meats into a bowl, leaving just the stock in the pot. Add the palm oil and leave to boil on medium heat for 6-8 minutes…

If you’re choosing not to use palm oil please skip this step.


4. Add in the grounded pepper and the locust beans…

 

5. Add the ground crayfish, then the chopped peppers….

 

6. Give it three minutes to cook. The blended okra is now added. Stir everything together briskly.

 

7. Refill the pot with the cooked meats, cooked smoked prawns, shredded smoked fish, and smoked fish. After stirring and combining, add the chopped okra.

8. Add the fresh prawns (just in case you are using any) and allow to cook for 5 mins

 

And it’s ready.

 

Serve with any swallow of your choice, I love mine with white or yellow Garri (Eba)
