HOW TO MAKE OGBONO OKRA SOUP

Here is another way to prepare and enjoy Ogbono soup. Check out the recipe and try it out please

Ingredients:

 

Assorted meats (Ponmo, Shaki, Bokoto, Beef, Goat meat and Offals are ideal)

Ogbono seeds

Pieces Of Okra

2 Cooking Spoons Palm Oil

Ugu, Spinach or Uziza leaves

3 Tablespoons Crayfish

1-2 Pieces Smoked Catfish

1-2 Pieces Dried Stockfish

2 Atarodo Chopped or blended

1 Medium Onion Chopped

3 Bouillon Cubes (I’m using two Knorr cubes and 1 Maggi naija pot)

Salt to taste

Preparation:

1. To prepare your okra, slice the remaining pieces with a knife and grate or mix half of it. You can also coarsely grind your Ogbono seeds and set them aside.

 

2.In a large pot, add the tough meats—in this case, the Shaki, Cow leg, and Ponmo—along with the sliced onions and salt to taste. Place the pot on a stovetop over medium heat. For 20 minutes, simmer it covered over low heat. This facilitates the natural juices of the meats.

 

3. Add enough water to cover the meats after 20 minutes, cover, and continue cooking until the meats are just tender but not falling apart. Utilizing a pressure cooker can let you finish this in about 30 minutes.

 

4. Add the softer meats, in this example the goat meat, once it's tender. Add the stock fish as well. Cook until the meats are soft.

 

5. When the meats and fish are soft, you should still have plenty stock water. At this time, make sure the heat is set to low to medium.

 

6.If using, shred your smoked fish, and add it to the broth. Then, add the crushed pepper or Scotch bonnet that has been blended or diced, followed by the palm oil, and bring to a boil for 3 to 5 minutes, or until the oil is thoroughly mixed into the soup.

 

7. The Ogbono should now be gently added, and the soup should start to draw at this point

 

8. After properly combining, wait for two minutes. Taste for seasoning and salt, and make adjustments as needed.

Add the chopped and blended okra now, and incorporate thoroughly while stirring.

 

9. Add the washed and cut Ugu or Uziza leaves...

 

10. Add the remainder of the crayfish after stirring and combining. Turn off the heat and let the residual heat simmer for 5 minutes.
